Aljomar Iberico Roasted Pork Ribs with garlic, parsley and mustard

Ingredients
(Serves 4)
For the ribs:
- 8 thick portions of Aljomar Iberico pork ribs
- 2 cloves garlic, chopped
- Fresh parsley, chopped
- Olive oil
- A splash of fresh lemon juice
- 1 heaping tablespoon whole grain mustard
- A splash of vinegar
- A splash of white wine
- Water and salt
Method For the ribs:
Generously season ribs with olive oil, chopped garlic and lemon juice. Place ribs in a baking dish with the meat touching the dish. Add at least one cup of water and a dash of white wine. Place in pre-heated oven, 200ºC (390º F), for approximately 25 minutes.
Turn the ribs, sprinkle with the pan juices and let bake another 20 minutes, or until golden brown. Baste ribs with the pan juices several times while baking to ensure a nice golden colour. The bottom of the pan should never be dry.
Add more wine or water as needed.
Prepare to serve
Place the ribs on a serving tray. Pour remaining pan juices into saucepan and bring to a boil Add mustard, vinegar and a generous amount of the parsley, stirring to mix. Season with salt and sprinkle over the meat.
It is always a good idea to accompany roasted meats with a tossed green salad to cleanse the palate.
